Sugar Sparkle Cut-Out Cookies (for Santa)

Okay so I was on the mind set that I needed to make new and different cookies Santa this year, but now it’s Christmas Eve and I feel guilty for saying that so here I am making cut-outs 😊

These are crazy easy and aren’t meant to be frosted, but I’m letting my daughter frost a few for Santa just for the fun of it.

They are sugary without being overwhelming and are a great consistency. Give them a try, Santa will thank you!

Ingredients:

  • 3C sifted cake flour
  • 1/4t baking powder
  • 1/2t salt
  • 1C unsalted butter
  • 3/4C superfine sugar
  • 1 large egg
  • 1 1/2t vanilla

Optional egg wash:

  • 1 large egg white
  • 2t water

Sift together the flour, baking powder and salt.

In a separate bowl using an electric mixer, mix the butter and sugar on medium speed.

Whisk the one egg and vanilla the mix into the butter mixture. Add dry ingredients 1/3 at a time, mixing only until combined. At this point I usually ditch the mixer and spoon and just combine lightly with my hands.

Knead the dough on a lightly floured surface very briefly, until smooth. Take the dough and separate into quarters and wrap in plastic wrap. Refridgerate briefly… about 15 mins. Longer is okay but the dough will be extremely hard and need a little defrost time before rolling out.

Preheat the oven to 350. Roll dough out to about 1cm thick and cut cookies out. If desired, you can brush with the egg white and water mix. Sprinkle with any type of sugar sprinkles.

Bake for 12-14 minutes, or until the edges are only very lightly browned. Transfer to wire racks and let cool.
