I saw this viral video from ‘Delish’ today that read “how to make your own Taco Bell ‘Crunch-Wraps'”. Delish videos admittedly drive me crazy because I feel like they just tell you to mix five million calories of cream cheese and sugar into something and call it a recipe. It in general isn’t good cooking.
Continue forward, and I also thought: “gross, you don’t even eat fast food!!”. Then I watched the tutorial video, and realized I could make these WAY BETTER with homemade ingredients. I found the video easy and interesting, but filed it away for much later, or probably never because I never remember to make food from videos I save.
About twenty minutes later, my husband reminded me he was going to be late and dinner was on me tonight 😳. I opened the fridge to see what I had to work with: cooked Spanish rice, homemade salsa, leftover homemade re-fried beans, lettuce, sour cream, cheddar cheese… basically a taco bar. Why do I have a leftover taco bar?? Because we JUST HAD TACOS! (Disclaimer – he is Mexican, so these kinds of leftovers are pretty normal for us).
I dug through the veggie and protein drawers in our fridge, and to my dismay found no motivation as to anything to cook for dinner tonight.
Whelp – what a better time than now to use this video and make my family homemade crunch wraps!? I have decided to call them tostadas, though that is not a correct term for what they are, but it makes me feel a little bit better on the inside to not name something in my kitchen after a fast food dish. 🙂
Here are the ingredients I used:
- Leftover (or canned) r-efried beans
- Leftover cooked Spanish rice
- Shredded cheddar cheese
- 2 avocados, mashed
- 1/2 onion, chopped
- Sour cream
- Large flour tortillas
- Small corn tortillas
- Salt, to taste
- Pepper, to taste
- Vegetable oil, for frying
Take 4 large flour tortillas and lay the fried corn tortilla in the middle. Cut a circle around the small tortilla to give you a small, equally sized flour tortilla. Set the trimmings aside. Watch the video if I am confusing you here, and it will all make sense.
Take one large flour tortilla, and spread some re-fried beans in a circle in the middle. Top with some Spanish rice.
Separately, take a fried corn tortilla and spread sour cream on the middle, then press it face down on the rice and beans.
Place your small cut out flour tortilla round on top of the cheese. Now, fold the edges up all around.
