These brownies came about on my actual birthday. We had been having way too much fun celebrating my birthday, and between dinners out, golfing, having friends over for football, we were little burnt out by the time my ACTUAL birthday arrived. I guess that would be the downfall of trying to truly celebrate your birthday for a full month, haha!
Well, on my actual birthday, the wheels fell off birthday month. My toddler threw a fit for about 5 hours, all while refusing to nap. She was pretty much crying over everything. Like, we are at Ikea, and she sees a plastic piggy bank, and starts crying because she thinks it is Peppa the Pig, but there is also a blue bank that must be Peppa’s daddy, but WHERE IS THE PURPLE PIG that is Peppa’s mom??!! Of course, a pretend purple plastic piggy bank that is Peppa the Pig’s mom is not even a thing, but she proceeded to ugly cry over it for about 45 minutes before I gave up on my shopping trip and went home. We don’t even watch Peppa the Pig for Christ sake. To add to this delight, my husband forgot he invited family (my in-laws) over for dinner, and I had to cut my birthday dinner I made myself into pieces to feed our guests. It truly, was a hot mess.
Around that time is where these brownies came to fruition. It was my birthday, the day sucked, my husband doesn’t bake, but dammit the world cannot keep me from having some delicious chocolate if I want some!
I however had zero f*cks to give, and was not about to continue this terrible day by dirtying a ton of dishes that I would have to clean myself while my nap-lacking toddler shouted delusional requests at me.
This brownie recipe is three easy steps: throw everything into a bowl, mix, bake. That’s it! If you make brownies out of a box, I strongly suggest you give this recipe a try and switch to scratch baking, since this is basically as easy as it gets!
- 2 cups granulated sugar
- 1 3/4 cups all purpose flour
- 5 large eggs
- 1 teaspoon salt
- 1 cup vegetable oil
- 1 teaspoon vanilla extract
- 1/2 cup unsweetened cocoa powder
- 2 cups semi-sweet chocolate chips
Preheat your oven to 350 degrees Fahrenheit.
Grease a 9 x 13 baking pan.
In a single bowl, toss all your ingredients in, other than the chocolate chips. Stir to combine with a wooden spoon. Toss in chips and give a few more stirs to incorporate.
Bake for 20-30 minutes… the first time making these I baked for a full 30 and will cut back to 25 next time to get a little more fudgy-ness out of them.
Enjoy immediately… close your eyes and pretend your toddler isn’t screaming at you with every bite! 😉
