Peanut Butter and Jelly Layer Cake – I saw this recipe on a blog I follow and just HAD to make it!!!

What is more nostalgic that peanut butter and jelly together?! For any American-raised kid, I think the flavor of peanut butter and jelly sandwiches must bring back memories of their childhood.

Plus, a recipe featuring these flavors sounds like a total win to me because 1. I am a mom to a toddler and I GUARANTEE I have those ingredients on-hand, and 2. I am also sure my toddler will approve of this flavor combo (not that she is one to turn down cake, haha!).

I found this recipe on By the Pounds, a blog by another Seattle-area blogger who does lots of recipe sharing like me! You can find her original recipe link HERE.

The idea is very simple; a yellow cake with jam as filling and peanut butter buttercream frosting. My cake was just a little different than Rachel’s, partially because I have a cake accident and dropped a WHOLE LAYER on the floor! So my cake was only two where hers was three. Also, I used raspberry jam as my filling, only because that is my favorite flavor. You really could use any flavor of jam that you like on your PB&J and get a great cake.

I made it for a girl’s night hosted at my house and it was a hit! Plus a few days later I baby-sat my friend’s kids and whipped out the leftovers of this as a way to win over their affections with sugar (also worked).

  1. Nice work! I’m glad you’re enjoying the recipe and I agree that any jam would be great! I also found a nice bonus of this cake was how long it stayed fresh
