Pot ‘O Gold Pancakes – A Fun St. Patty’s Day Breakfast

If it is a holiday you can theme breakfasts for, then it is my kind of holiday! Truly, I just think it is fun to have an excuse to make something special the kids will find entertainment in, and St. Patrick’s Day they find extra fun because food gets to be green. Well, I decided to take it one step further and go full on RAINBOW with these Pot ‘O Gold Pancakes!

The little leprechauns in your life will love the color and creativity of these rainbow pancakes on St. Patrick’s Day! Easy and fun breakfast. 

The awesome thing about these is that all you are really are doing is adding food coloring to your pancake batter, so there isn’t a whole lot of effort involved. I wrote our family stand-by basic pancake recipe in below in case you need one, but feel free to use your own, or even cheat with some Bisquick (NOT JUDGING!). Really the most extra effort involved is creating a separate bowl of batter per color you want, but that just results in a few extra dishes to wash.

If you like to decorate food now and then with food coloring, I would one-hundred percent consider ditching the crummy food coloring gels you can get at the grocery store, and opt for a nice coloring kit like this Wilton one. There are far more colors in this kit, and some of the tough ones to accomplish even come pre-mixed for you! Plus, they include a fun blending guide that instructs you how to mix your own hues and you can really accomplish anything. I don’t use food coloring often, and my kit has lasted me over two years and is still going strong! Here are some links (affiliate) to the one I use.

Note that this recipe made two servings that looked just like this. These are small pancakes. If you are feeding a crowd, I would suggest doubling the recipe!

Okay, now, on to the recipe!

Tools you need:

Food coloring kit
A Bowl for each color of batter you desire
Griddle for cooking

For the pancakes:

2 Cups all-purpose flour
1 Tablespoon baking powder
1/2 Teaspoon salt
1 Tablespoon sugar
2 Eggs
2 Cups milk
2 Tablespoons of melted, cooled butter

Directions:

Mix together the dry ingredients.

Beat the eggs into the milk, then stir in the cooled melted butter.

Gently stir the wet ingredients into the dry, mixing only enough to combine. Mixing hack – my husband likes to mix all his ingredients in our Ninja food processor. All it takes is just a few pulses and you are done! Plus the spout on there is nice for pouring batter.

Next, you will pour the batter into the individual bowls for color mixing. I used 6 colors, so I had 6 little mixing bowls. Make sure you use glass or ceramic bowls that will not stain – these colors aren’t playing around (don’t use plastic)! Follow the color mixing directions on the Wilton instructions to get your desired colors of the rainbow. There won’t be a lot of batter in each bowl, so it won’t take much coloring gel. I portioned mine out *mostly evenly, saving a little extra for the yellow since I made not only a yellow pancake for the rainbow, but some yellow coins at the bottom.

Once you are ready to start cooking, turn your griddle on to medium heat and butter the cooktop. Pour desired sized pancakes for your rainbow (approx 2 inches across), and also some smaller yellow ones the size of coins (about the size of a quarter). Arrange in order of the rainbow (ROYGBIV is what I’m saying peeps) and serve hot! I used whipped cream to make little clouds at the end of mine, but some sprinkles would be a fun accent too!

This is the Ninja Brand blender set we have and we love it. It’s really cool because you can store the whole thing away – there is no stand that needs to be left on the counter! The motor attaches on the top and blends within. The small attachment on the left is great for blending nuts and crumbles for strudels too.

For pancake mornings we love using our electric cast iron griddle because the cooktop surface is so large! Very easily able to get a large batch of pancakes cooked in a short amount of time. We use ours regularly when making family brekkie on Sundays!
