Though we are not a completely vegetarian household, I enjoy eating vegetarian for a few reasons. First of all, my body feels healthier and my weight is more stable when I eat veggie, and I’m sure my husband’s cholesterol levels need it. Secondly, it is way better for the environment! The meat industry is one of the largest strains on our climate. Last, it’s actually pretty darn cost effective! This cauliflower tikka masalla was a recent invention that my household found successful. Recipe is linked, I hope you like it!
This vegetarian pasta salad is not only filling and delicious but it is super easy to toss together too! I included my review of the Banza chickpea pasta that my family tried and has been enjoying.
With Thanksgiving (and therefore lots of over-indulging ) around the corner, I am making extra sure to mix in some lighter meals over the next few weeks. Though with the tortellini this is surely not a 'low calorie' meal, I think it is a much healthier alternative to a pasta dish smothered in meat and a heavy-duty cream sauce! It however still hits all the fall comfort marks, and is a great vegetarian recipe. I hope you enjoy!
This Creamy Tuscan Chicken recipe is so simple, and so worth it! I served it over mashed potatoes, and it totally hit the comfort food spot for me. This is a perfect and easy fall dinner that I hope you love!
This BBQ Black Bean Burrito recipe comes to you from Thug Kitchen, one of my favorite vegetarian cookbooks! These guys have mastered the art of great vegan cooking in addition to making you laugh uncontrollably while following their pirate-sounding directions. Be sure to pin and save the recipe, and links are included as to where you can find a copy of Thug Kitchen for yourself!!
Some dinner inspiration for hot summer nights where cooking outside on the BBQ sounds a lot better than slaving away in the kitchen. Steak and lobster on the BBQ with a paprika butter sauce! Recipe linked.. be sure to pin for later!
If your New Year's Resolution was health-related, here is a fun recipe you can even get the family to 'bite' on. My version of pizza bagels, using zucchini in place of your bread. A lower-carb version for sure!
I feel like all you need to do is read the title of this recipe to know that it is friggin delicious. A few months back, I would have never thought to eat scallops in a heavier cream sauce like this, but then an experience dining out where I had BAKED scallops in a lovely flavorful sauce just like this sold me for life! Scallops. Bacon. Cream. This recipe is a winner!
10 Minute Dinner Idea - Caprese Pasta Salad with Tortellini! This dinner is so delicious, it isn't even fair how easy it is to whip up. If you want a more sophisticated dinner on a week night where you don't have much time to whip something up, I would suggest giving this recipe a try!
