My Recipe for the Easiest Alfredo Sauce
With all this time spent at home lately, we are attempting to make the most of things with some good home cooking. Not only does some comfort food do the soul good, but it also is pretty darn affordable to make. This Alfredo sauce recipe is mostly milk, butter, and flour... all super cheap ingredients! You can make this to go with pasta, chicken, or even scoop it up with some nice warm bread. It is so creamy and delicious and I hope you enjoy it as much as we do!
Summer Veggie Corn Chowder
This recipe is a fantastic, cozy end-of-summer dinner that has both summer vegetables paired with a hearty, creamy soup. It is delicious and comforting and is even vegetarian! I hope you enjoy this summer vegetable corn chowder too.
Vegetarian Tikka Masala over Rice
Though we are not a completely vegetarian household, I enjoy eating vegetarian for a few reasons. First of all, my body feels healthier and my weight is more stable when I eat veggie, and I’m sure my husband’s cholesterol levels need it. Secondly, it is way better for the environment! The meat industry is one of the largest strains on our climate. Last, it’s actually pretty darn cost effective! This cauliflower tikka masalla was a recent invention that my household found successful. Recipe is linked, I hope you like it!
Meatless Monday – Caprese Pasta Salad w/Banza Chickpea Noodles

Three Cheese Tortellini with Butternut Squash – A Fall Meatless Monday Recipe
With Thanksgiving (and therefore lots of over-indulging ) around the corner, I am making extra sure to mix in some lighter meals over the next few weeks. Though with the tortellini this is surely not a 'low calorie' meal, I think it is a much healthier alternative to a pasta dish smothered in meat and a heavy-duty cream sauce! It however still hits all the fall comfort marks, and is a great vegetarian recipe. I hope you enjoy!
Creamy Tuscan Chicken over Mashed Potatoes
This Creamy Tuscan Chicken recipe is so simple, and so worth it! I served it over mashed potatoes, and it totally hit the comfort food spot for me. This is a perfect and easy fall dinner that I hope you love!
