Just because a food is entirely plant-based absolutely does not mean it is flavorless or unfulfilling! But often times people think that about vegetarian cooking, but I think they just don't know where to start! So, I am sharing two of my favorite vegetarian cookbooks that helped spring me into a more vegetarian lifestyle at home.
This week instead of sharing a "Meatless Monday" post, I thought I would share a few simple things that we did that helped us easily transition into eating more vegetarian meals in our household. The future is plant-based and we are trying to get on board!
Vegetarian/vegan cooking (at least I think) often gets a bad rep from the general public in regards to flavor and how filling it is. Honestly, I have been trying to dive more into vegetarian eating for sustainability reasons, and being a lifelong meat-eater am finding there is no reason for this stigma! There are tons of creative meat recipes and substitutes out there, and a well-prepared vegetarian meal can be just as if not more delicious. I set out to try and discover a new vegetarian restaurant in Seattle and came across the "No Bones Beach Club" in Ballard and thought it was fantastic! Here is my full experience.

Though we are not a completely vegetarian household, I enjoy eating vegetarian for a few reasons. First of all, my body feels healthier and my weight is more stable when I eat veggie, and I’m sure my husband’s cholesterol levels need it. Secondly, it is way better for the environment! The meat industry is one of the largest strains on our climate. Last, it’s actually pretty darn cost effective! With Thanksgiving (and therefore lots of over-indulging ) around the corner, I am making extra sure to mix in some lighter meals over the next few weeks. Though with the tortellini this is surely not a 'low calorie' meal, I think it is a much healthier alternative to a pasta dish smothered in meat and a heavy-duty cream sauce! It however still hits all the fall comfort marks, and is a great vegetarian recipe. I hope you enjoy!

Fall is here, and therefore I am craving hearty stews. Casoulette is one of my favorite treats when the weather is dreary, but it is not the healthiest option. I decided to attempt a vegetarian (vegan actually) version of this French staple... of course not the same without meat, but accomplishes a much healthier dish and is a lovely fall supper!
