How to quick pickle red onions

The older I get, the more I realize how one small thing can make a big difference in taste and presentation of food. Your meal can be tipped over the edge by attention to detail as simple as a quick garnish, sauce, or topping. One of my favorites these days are pickled red onions!

A charcuterie board at a nice restaurant is most likely accented by some, or you could find them atop a fancy hamburger. The honest truth however is that they are as simple to make as a salad dressing and are such an easy way to elevate your cooking!

We have busted out this ‘quick pickle’ recipe a few times this year already, most notably using it at our Memorial Day BBQ to make some sliders look fantastic. The awesome thing was that these sat in the brine for *maybe* an hour before serving? They are a fix and forget kind of thing that can be prepped in advance OR the same day as your event and either way the result is great!

Quick-pickled red onions, you are a staple for me this summer! Recipe and instructions below… enjoy 😋

Ingredients:

  • 1/2 cups apple cider vinegar
  • 1 tablespoon sugar
  • 1 1/2 teaspoons kosher salt
  • 1 cup water
  • 1 red onion, thinly sliced

Directions:

In a single bowl, combine the first four ingredients, whisking until the sugar and salt dissolve.

Place your onions in your pickling container (can use jar, I use my snapware) and pour the mixture over them. Let set for a minimum of one hour. Can serve up to 2 weeks. Drain before serving.
