Three Cheese Tortellini with Butternut Squash – A Fall Meatless Monday Recipe

With Thanksgiving (and therefore lots of over-indulging ) around the corner, I am making extra sure to mix in some lighter meals over the next few weeks. Though with the tortellini this is surely not a 'low calorie' meal, I think it is a much healthier alternative to a pasta dish smothered in meat and a heavy-duty cream sauce! It however still hits all the fall comfort marks, and is a great vegetarian recipe. I hope you enjoy!

Balsamic & Tomato Toasts with Goat Cheese Spread

With some fresh tomatoes finally coming out of our garden, I had to put together a special dish for them that would really bring out their fresh flavors! With a mashup of some of my absolute favorite flavors (balsamic, olive oil, garlic, rosemary, and of course CHEESE!) I put together these delightful little toasts that would be a wonderful appetizer or dinner any time of year!
