Vegetarian Tikka Masala over Rice

Though we are not a completely vegetarian household, I enjoy eating vegetarian for a few reasons. First of all, my body feels healthier and my weight is more stable when I eat veggie, and I’m sure my husband’s cholesterol levels need it. Secondly, it is way better for the environment! The meat industry is one of the largest strains on our climate. Last, it’s actually pretty darn cost effective! Vegetarian Cassoulette – A Hearty and Beautiful Dish for Fall!

Fall is here, and therefore I am craving hearty stews. Casoulette is one of my favorite treats when the weather is dreary, but it is not the healthiest option. I decided to attempt a vegetarian (vegan actually) version of this French staple... of course not the same without meat, but accomplishes a much healthier dish and is a lovely fall supper!

Meatless Monday – Cauliflower Alfredo Pasta w/Garden Fresh Green Peas

This healthy Alfredo Sauce recipe uses a cauliflower and broth base, instead of butter and cream. It does still have some cheese, but is far healthier than the alternative. I mixed in some summer peas and made this dish as my Meatless Monday dinner. I hope you enjoy this very easy recipe!
