Though we are not a completely vegetarian household, I enjoy eating vegetarian for a few reasons. First of all, my body feels healthier and my weight is more stable when I eat veggie, and I’m sure my husband’s cholesterol levels need it. Secondly, it is way better for the environment! The meat industry is one of the largest strains on our climate. Last, it’s actually pretty darn cost effective! With Thanksgiving (and therefore lots of over-indulging ) around the corner, I am making extra sure to mix in some lighter meals over the next few weeks. Though with the tortellini this is surely not a 'low calorie' meal, I think it is a much healthier alternative to a pasta dish smothered in meat and a heavy-duty cream sauce!
