What’s cooking, Abbey Co.? My favorite cookbooks at the moment (spoiler alert, they are vegetarian!)

Just because a food is entirely plant-based absolutely does not mean it is flavorless or unfulfilling! But often times people think that about vegetarian cooking, but I think they just don't know where to start! So, I am sharing two of my favorite vegetarian cookbooks that helped spring me into a more vegetarian lifestyle at home.

Vegetarian Tikka Masala over Rice

Though we are not a completely vegetarian household, I enjoy eating vegetarian for a few reasons. First of all, my body feels healthier and my weight is more stable when I eat veggie, and I’m sure my husband’s cholesterol levels need it. Secondly, it is way better for the environment! The meat industry is one of the largest strains on our climate. Last, it’s actually pretty darn cost effective! Three Cheese Tortellini with Butternut Squash – A Fall Meatless Monday Recipe

With Thanksgiving (and therefore lots of over-indulging ) around the corner, I am making extra sure to mix in some lighter meals over the next few weeks. Though with the tortellini this is surely not a 'low calorie' meal, I think it is a much healthier alternative to a pasta dish smothered in meat and a heavy-duty cream sauce! It however still hits all the fall comfort marks, and is a great vegetarian recipe. I hope you enjoy!
