Three Cheese Tortellini with Butternut Squash – A Fall Meatless Monday Recipe

With Thanksgiving (and therefore lots of over-indulging ) around the corner, I am making extra sure to mix in some lighter meals over the next few weeks. Though with the tortellini this is surely not a 'low calorie' meal, I think it is a much healthier alternative to a pasta dish smothered in meat and a heavy-duty cream sauce! It however still hits all the fall comfort marks, and is a great vegetarian recipe. I hope you enjoy!

Did you know that homemade biscuits are so easy to throw together, and that you can bake them in the time that it takes you to make this sausage gravy? Biscuits and Gravy are such a hearty and delicious meal that make me think of a foggy fall morning where you plan to have a jumbo brunch and snuggle under a blanket on your couch with coffee all morning. Nutella is all the rage these days. I honestly find it a little sweet for a breakfast kind of food, but I do enjoy it on a cake when I am already expecting a very sugary flavor. This cake combines a lot of different flavors - banana, chocolate, and nutella. I think it is a great diversion from a normal yellow or chocolate cake, so if you are in the mood to try something new, I would give this a try for sure!

I feel like all you need to do is read the title of this recipe to know that it is friggin delicious. A few months back, I would have never thought to eat scallops in a heavier cream sauce like this, but then an experience dining out where I had BAKED scallops in a lovely flavorful sauce just like this sold me for life!
