I call this the “Sunday Night Strata” since I find myself making it at the end of every week… it’s awesome because it uses up all your leftovers that you weren’t sure what else to do with, while simultaneously making the family a breakfast that will get you through the start of the week.
The concept isn’t that you will go out and grocery shop for ingredients, you are just using what you have laying around!
For the bread, I often find I have some leftover baguette or hot dog rolls that I will cube up. Any type of bread you have that needs to be used up works.
Same with the meats! If I made a beef roast earlier in the week, cube it and toss it in. If I made too many breakfast meats and have some leftover bacon or sausage, that goes in too! Lunch meats that are reaching their use by date are another great option. For veggies I always add onions, but broccoli does nicely. I also always add cheese and here same thing, toss in what sounds good!
All you need is the same number of eggs, milk, and spices every time, and the rest you can swap out!
Here is how I made mine this week:
- 8in square Pyrex baking dish
- 8eggs
- 1C milk
- Garlic powder
- Sea salt
- Pepper
- 1 1/2C cubed French Hoagie Rolls
- 5 Breakfast sausages, diced
- 4 Slices Black Forest Deli Ham, diced
- 1/2 Onion, diced
- 1/2C Leftover cooked home-fried potatoes
- 1/3C Cheddar cheese, grated
Preheat your oven to 350 degrees Fahrenheit.
Whisk your eggs and milk in a large bowl. Sprinkle with your garlic, salt and pepper and whisk again to combine. Set aside.
In your baking dish, layer your bread, potatoes, meats and veggies. Pour the egg mixture over top. Bake for 40-45mins, until the eggs have set.
I refrigerate overnight, then cut up into portions and wrap in foil in the morning. Then everyone in the family has an easy breakfast to grab on the go to start your week!
