10 Minute Dinner Idea: BLTA Caesar Salad 

Just a quick post with some dinner inspiration! We made this a few days ago and it was so simple and my daughter totally chowed it down, thanks to the avocado! It is a salad made with ingredients you should have on-hand most of the time, so it should be quick, easy, and painless. Something to throw together in a few minutes on a busy night that is delicious and nutritious!

 

Here is what you need:

  • A pack of bacon (I always go to the fancy grocery stores and get the discounted pack of ‘bacon ends’ because it will be extra flavorful and doesn’t need to be pretty since I’m chopping it up anyways!)
  • 1 Pack of Hearts of Romaine Lettuce
  • 1 Pack of Grape Tomatoes
  • 2 Ripe Avocados
  • 1 Lemon or Lemon Juice
  • Caesar Salad Dressing

Chop your ingredients and place in a bowl, sprinkle with lemon juice and toss.  Lettuce should be sliced, grape tomatoes halved, bacon chopped, and avocado diced. Very lightly sprinkle with salad dressing. Toss and serve, it is that easy!

Below is the portion I made my toddler – she is not on the same diet as I am since her metabolism is AMAZING and mine is prehistoric. I subbed out the lettuce and replaced it with whole wheat rice to make more of a protein bowl than a salad… I guess that is something anyone could do if you need more substance 🙂
