Fall is here, and therefore I am craving hearty stews. Casoulette is one of my favorite treats when the weather is dreary, but it is not the healthiest option. I decided to attempt a vegetarian (vegan actually) version of this French staple... of course not the same without meat, but accomplishes a much healthier dish and is a lovely fall supper!
Tried out an easy tutorial from the "Delish" website, how to make a taco bell style crunch wrap supreme. I did a healthier version with fresh homemade salsa, fresh avocado, homemade rice and re-fried beans.
