Tips to help get yourself in a vegetarian mindset – vegetarian cooking can be easy!

This week instead of sharing a "Meatless Monday" post, I thought I would share a few simple things that we did that helped us easily transition into eating more vegetarian meals in our household. The future is plant-based and we are trying to get on board!

Meatless Monday – Cauliflower Alfredo Pasta w/Garden Fresh Green Peas

This healthy Alfredo Sauce recipe uses a cauliflower and broth base, instead of butter and cream. It does still have some cheese, but is far healthier than the alternative. I mixed in some summer peas and made this dish as my Meatless Monday dinner. I hope you enjoy this very easy recipe!
