12 Days of Christmas Blog Challenge Day 3 – Favorite Christmas Cookie (Sugar Sparkle Cut-Out Cookies (for Santa)

This recipe may or may not have won out because of its ease, thanks to the fact that no frosting is needed! Plus, what is more important than having a stand-by cookie recipe for Santa, especially when you have little ones who are just so engulfed in the magic of Christmas?! Cookie decorating special cookies for Santa on Christmas Eve is one of my favorite Christmas traditions, and is one I am of course excited to pass down to my daughter.

If you are looking for a cookie that IS meant to be frosted, I would refer you to my powder sugar cookie recipe with royal icing. Or, if you want something a little more non-traditional and are totally bored by the fact that I shared a cut-out cookie recipe, give these Brown Sugar Pecan Sandies a try, I love them for Christmas!

Well, if you need an easy cut-out cookie to keep your house from ending up on Santa’s naughty list, I think you should give these a try 🙂

Ingredients:

  • 3C sifted cake flour
  • 1/4t baking powder
  • 1/2t salt
  • 1C unsalted butter
  • 3/4C superfine sugar
  • 1 large egg
  • 1 1/2t vanilla

Optional egg wash:

  • 1 large egg white
  • 2t water

Sift together the flour, baking powder and salt.

In a separate bowl using an electric mixer, mix the butter and sugar on medium speed.

Whisk the one egg and vanilla the mix into the butter mixture. Add dry ingredients 1/3 at a time, mixing only until combined. At this point I usually ditch the mixer and spoon and just combine lightly with my hands.

Knead the dough on a lightly floured surface very briefly, until smooth. Take the dough and separate into quarters and wrap in plastic wrap. Refridgerate briefly… about 15 mins. Longer is okay but the dough will be extremely hard and need a little defrost time before rolling out.

Preheat the oven to 350. Roll dough out to about 1cm thick and cut cookies out. If desired, you can brush with the egg white and water mix. Sprinkle with any type of sugar sprinkles.

Bake for 12-14 minutes, or until the edges are only very lightly browned. Transfer to wire racks and let cool.

If I do frost them, I will use my favorite recipe for Royal Icing!
